The Harbin Shangri-La Hotel invited chef Zhou Hui from Ningbo, East China’s Zhejiang province, to present at the Ningbo Cuisine Festival held in its Chinese restaurant from Sept 16 to Oct 7.
Ningbo cuisine consists mainly of steamed, roasted, and braised seafood, and it is very strict about retaining the original freshness, tenderness, and softness of its ingredients. The salty and fresh seafood is taken from lakes and the sea.
A total of 23 authentic Ningbo dishes, such as Great Croaker with Pickled Cabbage (Xuecai Dahuangyu), Ningbo-style Ricefield Eel Slices (Ningbo Shansi), and Zhoushan Braised Squid (Hongshao Zhoushan Daiyu), will be served at the Shangri-La Hotel.
